I sometimes go trout fishing at Chew valley lake & I find that the following is the only way to make rainbow trout taste nice:
Gut, skin & de-bone fish & press in chopped garlic, bay leaves, Cajun seasoning & slices of orange. Place in fish smoker with 1 teaspoon of oak chippings & cook for 20 mins. I would be interested to hear if anyone has any good Bass recipies, or any other fish recipies for that matter other than the much dreaded Fugu fish!!.

I am wating for Colin to enlighten us, but I have had bass rosted in deep sault, and it was lovley, the way you cook rainbow' you would not know the diference if you used a lump of tripe, it would tast the same, try poching it like you would a salmon, and get the real tast, but we need Colin to expand our knowlage, minde you I like the idear of smoking.

sea bas... ok fillet it and rub in olive oil or rape seed oil, season with salt pepper have the oven as hot as you can get it take out a raosting dish and drop in a little oil and knob of butter drop the fish in skin side down and place back in the oven for 2-3 mins no more, serve with what ever you fancy but have it ready to go as soon as the fish comes out. nb the fish should be soft tender and fall apart.

Keep the fish whole and put a little butter, mixed herbs and a touch of lemon juice inside the fish, lightly wrap it in foil and either put it in the oven or on a Barbie. Thats the way I do mine anyway

hi. just had bass today, oven baked on a bed of veg, salted peppered and lemon plus 250ml of white wine[it was a keith floyd recipe ] beautiful. got the recipe from the book floyd on fish,loads of good ones all different fish, makes you want to go catch another for supper. ;D ;D ;D

Boil a bass in petrol and garnish with cat litter, you will probably never eat a bass again which is a good thing! Otherwise season well with S&P slice each flank with a sharp knife, stuff the cavity with quartered lemons and spring onions, slice another lemon thinly and cover the fish with it, add a generous wad of butter and either fresh dill, thyme or corriander. Wrap in foil. Stick it on a BBQ, or oven until cooked. Serve with salad, rice, or roasted vegetables, and a chilled white wine. Bream is better though!

I always like hot smoking Mackeral,
I used an old propane BBQ, and then put wood chops in some tin foil Double wraped then poke lots of holes in in the foil. Put the BBQ on its lowest setting, and put the wood chips on the coals. get some good smoke going. Get some Coarse ground black pepper and cover the flesh side of a good filet on mackeral (or any fish Ive seen the do it with CARP and PIKE in Canada) then put the fish skin side down on the rack. close the lid as quick as possible. and leave for a about 15 to 20 mins.
For best results try to make the BBQ as air tight as possible except for a hole the the bottom for oxygen, and try not to let the wood chips catch fire that'll really screw it up.

I fished Chew a few years ago.I remember Dawl Bach flies (i think thats the correct spelling?)worked really well.Are they still anygood?Anyway my favourite way to cook Bass...1 )gut,clean and descale 1 bass 2)put slice of lemon in cavity 3)lay bass on tinfoil and place on baking tray 4) pack Bass in rocksalt and bake till cooked.5) remove salt and serve with salad,on a bed of savoury rice or with new potatoes,runner beans,sweetcorn.........Quick tip on making fish descaler..next time you have a bottle of beer keep the crown tops.You'll need about six so get a crate invite some mates round and you can make one each.get a wooden sanding block or old wooden wire brush handle and nail the bottle tops to them.Now if I could just catch a Bass

Hi Bass, the fishing at Chew valley lake this season has been the worst on record with some season ticket holders trying to get their money back ( slim chance of that!). The reason? well there were cold North- Easterly winds earlier stopping the buzzers hatching & now the heat stops them feeding, & the locals all have their own strange theories.
I have grown a little tired of fly fishing for stocked trout & think that sea fishing is more challenging, interesting & far more varied. Your idea for a fish de-scaler is most interesting, I'll go & buy a crate of strong lager & make a couple after sobering up.

I know what you mean.I fish Hanningfield and Bewl occasionally but i havent trout fished in over a year,and Bewl water is the lowest its ever been.I much prefer fly fishing in the sea when conditions allow (which hasn't happened for me yet this year)Although the flyrod sits in the boot just in case.
